It is rare to only see one seed, but unfortunately because the seed is in the watermelon it is impossible to get a clean shot.
I would suggest staging the shot a bit, taking a seed and placing it on a seedless slice of melon. This way you can get a sharp shot of the seed and the shot will be a lot better. If you havent eaten all your props yet, give it a go 
that is kind of neat but I didn't know it was watermelon until RayTedwell said so.
