I cannot imagine eating a donkey, but I have eaten horse, and it ain't too bad...soft meat. The Chinese will eat anything including the kitchen table.

I like horse meat very much. It is said to be healthier than beef. I often buy some horse minced meat at the market (there are not many horse butchers left), I use to prepare it as a steak tartare, which is raw minced meat with salt, pepper, egg yalk, minced shallots, capers...
Donkey meat can be found here in dry sausages (saucissons) mixed with pork meat. But I don't find them very tasty.
